Roba!Dolce™ Gelato is Italian Ice Cream. However, it is not the same thing as what “Americans” refer to as Ice Cream. Ice Cream is 14% – 16% Butterfat while Authentic Gelato is 3% Butterfat. Ice Cream has 40 - 60% air by volume while Authentic Gelato contains no more then 20% air by volume. Authentic Gelato is a combination of whole milk and natural flavorings or fresh fruit. It is less firmly frozen, softer and more intensely flavored and colored than Ice Cream. Roba!Dolce™ Authentic Gelato is fresher, purer in taste with a lighter and creamier texture than Ice Cream.
